Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 can diced tomatoes (14 oz)
  • 1 onion diced
  • 1 green bell pepper diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 cup of chicken broth or seafood broth
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Cooked rice for serving
  • green onions chopped or parsley for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  2. Add the minced garlic, paprika, cayenne pepper, and thyme. Cook for another minute until fragrant.
  3. Stir in the tomato paste and cook for another minute.
  4. Pour in the diced tomatoes and broth. Bring to a simmer and let it cook for about 10 minutes, stirring occasionally.
  5. Add the shrimp to the skillet and cook until they turn pink and opaque, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the Shrimp Creole over cooked rice and garnish with chopped green onions or parsley.
  8. Enjoy!
