Brussels sprouts stir-fry with corn and bacon is a delicious and savory dish made by sautéing sliced Brussels sprouts with sweet corn kernels and crispy bacon in a pan. The combination of flavors creates a tasty and satisfying side dish or main course.

Ingredients
  

  • 1 lb Brussels sprouts trimmed and thinly sliced
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 6 slices bacon chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • red pepper flakes for added heat, optional

Method
 

  1. In a large skillet or wok, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pan and set aside, leaving the bacon grease in the pan.
  2. Add the olive oil to the pan with the bacon grease. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced Brussels sprouts to the pan and sauté for about 5-7 minutes until they start to soften and caramelize.
  4. Add the corn kernels to the pan and continue to cook for another 3-4 minutes until the corn is heated through.
  5. Season the stir-fry with salt, pepper, and red pepper flakes if desired. Stir in the cooked bacon.
  6. Serve the Brussels sprouts stir-fry hot as a side dish or as a main course. Enjoy!
