Chicken in Mustard Onion Sauce

- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced onions and cook until they are caramelized, about 10-15 minutes.
- Add the minced garlic to the skillet and cook for another minute.
- Stir in the Dijon mustard, chicken broth, and heavy cream. Bring the mixture to a simmer.
- Return the chicken breasts to the skillet, reduce the heat to low, cover, and simmer for 15-20 minutes or until the chicken is cooked through.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve the chicken in mustard onion sauce hot, garnished with fresh parsley. Enjoy!
