Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 2 tablespoons olive oil
  • 2 large onions thinly sliced
  • 4 cloves garlic minced
  • 1/4 cup Dijon mustard
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced onions and cook until they are caramelized, about 10-15 minutes.
  4. Add the minced garlic to the skillet and cook for another minute.
  5. Stir in the Dijon mustard, chicken broth, and heavy cream. Bring the mixture to a simmer.
  6. Return the chicken breasts to the skillet, reduce the heat to low, cover, and simmer for 15-20 minutes or until the chicken is cooked through.
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Serve the chicken in mustard onion sauce hot, garnished with fresh parsley. Enjoy!
