Chicken yogurt curry
Ingredients
- 1 lb chicken breast or thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 1 onion finely chopped
- 2 cloves garlic minced
- 1 inch ginger grated
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1/2 teaspoon chili powder (adjust to taste)
- Salt and pepper to taste
- 2 tablespoons oil
- Fresh cilantro for garnish
Instructions
- In a large bowl, mix together the yogurt, garlic, ginger, cumin, coriander, turmeric, garam masala, chili powder, salt, and pepper. Add the chicken pieces and coat them evenly with the marinade. Let it marinate for at least 30 minutes, or overnight for best results.
- In a large skillet, heat the oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the marinated chicken to the skillet and cook until the chicken is browned on all sides, about 5-7 minutes.
- Lower the heat, cover the skillet, and let the chicken cook for another 10-15 minutes, stirring occasionally.
- Once the chicken is cooked through, taste and adjust seasoning if needed. If the curry is too thick, you can add a little water to reach your desired consistency.
- Garnish with fresh cilantro and serve hot with rice or bread.
- Enjoy!
