Meetei Classical Pork Curry

Method
- Heat oil in a large pot or pressure cooker. Add the chopped onions and sauté until translucent.
- Add the minced garlic and grated ginger, and cook for a couple of minutes until fragrant.
- Add the pork pieces to the pot and brown them on all sides.
- Sprinkle turmeric powder, cumin powder, coriander powder, and salt over the pork. Mix well to coat the meat with the spices.
- Add the chopped tomatoes and sliced green chilies to the pot. Stir everything together.
- Add water just enough to cover the pork pieces. Cover the pot with a lid and let it simmer for about 45-60 minutes, or until the pork is tender.
- Once the pork is cooked, check for seasoning and adjust salt if needed.
- Garnish with fresh coriander leaves before serving.
- Serve the Meetei Classical Pork Curry hot with steamed rice or flatbread.
