Devil Curry
Ingredients
- 1 lb chicken beef, or lamb, cut into bite-sized pieces
- 2 potatoes peeled and cubed
- 1 onion chopped
- 2 cloves garlic minced
- 1 inch piece ginger grated
- 2 tablespoons curry powder
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder (adjust to taste)
- 1 can coconut milk
- 1 cup water
- Salt and pepper to taste
- Cooking oil
Instructions
- Heat some oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger, and cook for another minute until fragrant.
- Add the meat to the pot and cook until it’s browned on all sides.
- Sprinkle in the curry powder, turmeric powder, and chili powder. Stir well to coat the meat with the spices.
- Add the cubed potatoes and stir to combine.
- Pour in the coconut milk and water. Season with salt and pepper.
- Bring the curry to a simmer, then reduce the heat and let it simmer gently for about 30-40 minutes, or until the meat is tender and the potatoes are cooked through.
- Taste and adjust the seasoning if needed. Add more chili powder if you want it spicier.
- Serve your Devil Curry hot with steamed rice or crusty bread. Enjoy!
