Makroudh is a popular North African pastry made with a semolina dough filled with dates or nuts, then fried or baked and often coated in honey or syrup.

Ingredients
  

  • 2 cups fine semolina
  • 1/3 cup vegetable oil
  • 1/3 cup water
  • 1/4 tablespoon salt
  • 1/2 tablespoon ground cinnamon
  • 1/2 cup dates pitted and chopped
  • 2 tablespoon honey
  • Oil for frying

Method
 

  1. In a mixing bowl, combine the semolina, vegetable oil, water, salt, and cinnamon. Mix well to form a dough.
  2. Divide the dough into small balls and flatten each ball into a small disc.
  3. Place a small amount of chopped dates in the center of each disc and fold the dough over to enclose the filling. Press the edges to seal.
  4. Heat oil in a deep frying pan over medium heat. Fry the Makroud in batches until golden brown.
  5. Remove the Makroud from the oil and drain on paper towels.
  6. Drizzle honey over the warm Makroud and let them cool before serving.
