Gluten-free plum clafoutis is a delicious French dessert made with fresh plums baked in a custard-like batter. The gluten-free version uses alternative flours such as rice flour or almond flour instead of traditional wheat flour to accommodate those with gluten sensitivities.

Ingredients
  

  • 4-5 ripe plums pitted and sliced
  • 1/2 cup gluten-free flour (such as rice flour or almond flour)
  • 1/3 cup granulated sugar
  • 3 eggs
  • 1 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • Pinch salt
  • Powdered sugar for dusting

Method
 

  1. Preheat your oven to 350°F (180°C) and grease a baking dish or pie dish.
  2. Arrange the sliced plums in a single layer in the bottom of the dish.
  3. In a mixing bowl, whisk together the gluten-free flour, sugar, and salt.
  4. In a separate bowl, beat the eggs, then gradually whisk in the milk and vanilla extract.
  5. Slowly add the wet ingredients to the dry ingredients, stirring until the batter is smooth.
  6. Pour the batter over the plums in the baking dish.
  7. Bake for about 30-35 minutes, or until the clafoutis is set and golden brown on top.
  8. Allow the clafoutis to cool slightly, then dust with powdered sugar before serving.
