Dutch letter pastry, also known as banket, is a traditional Dutch pastry made with a flaky pastry dough and filled with almond paste. It is often shaped into the letter “S” or other shapes and is a popular treat in the Netherlands, especially around the holidays.

Ingredients
  

  • 1 package puff pastry dough (thawed)
  • 1 cup almond paste
  • 1 egg (beaten)

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry dough into a rectangle on a lightly floured surface.
  3. Spread the almond paste evenly over the dough.
  4. Roll the dough into a log shape, starting from the long edge.
  5. Place the log onto the prepared baking sheet and shape it into a letter “S” or any other desired shape.
  6. Brush the pastry with the beaten egg for a golden finish.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.
  8. Allow the Dutch letter pastry to cool slightly before slicing and serving.
