Method
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry dough into a rectangle on a lightly floured surface.
- Spread the almond paste evenly over the dough.
- Roll the dough into a log shape, starting from the long edge.
- Place the log onto the prepared baking sheet and shape it into a letter "S" or any other desired shape.
- Brush the pastry with the beaten egg for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.
- Allow the Dutch letter pastry to cool slightly before slicing and serving.
