Method
- Preheat your oven to 350°F (180°C).
- In a bowl, mix together the grated pumpkin, sugar, and cinnamon until well combined.
- Brush a baking dish with melted butter.
- Place a sheet of phyllo pastry in the baking dish and brush with melted butter. Repeat this process, layering buttered phyllo sheets until you have used half of the sheets.
- Spread the pumpkin filling evenly over the phyllo layers.
- Continue layering the remaining phyllo sheets on top of the pumpkin filling, brushing each sheet with melted butter.
- Brush the top layer with melted butter and sprinkle with a little extra sugar.
- Bake in the preheated oven for about 40-45 minutes, or until golden brown and crispy.
- Allow the Bundevara to cool slightly, then dust with powdered sugar before serving.
