Preheat your oven to 350°F (180°C).
In a bowl, mix together the grated pumpkin, sugar, and cinnamon until well combined.
Brush a baking dish with melted butter.
Place a sheet of phyllo pastry in the baking dish and brush with melted butter. Repeat this process, layering buttered phyllo sheets until you have used half of the sheets.
Spread the pumpkin filling evenly over the phyllo layers.
Continue layering the remaining phyllo sheets on top of the pumpkin filling, brushing each sheet with melted butter.
Brush the top layer with melted butter and sprinkle with a little extra sugar.
Bake in the preheated oven for about 40-45 minutes, or until golden brown and crispy.
Allow the Bundevara to cool slightly, then dust with powdered sugar before serving.
