  • In a large bowl, mix together the flour, sugar, salt, vegetable oil, and warm water until a dough forms. Knead the dough until smooth, then cover and let it rest for 30 minutes.
  • Roll out the dough on a floured surface to about 1/4 inch thickness. Cut the dough into squares, about 4 inches by 4 inches.
  • Place a spoonful of crema catalana or custard filling in the center of each square. Fold the dough over the filling to create a triangle shape and press the edges to seal.
  • Heat vegetable oil in a deep fryer or large pot to 350°F (180°C). Carefully place the Xuixo in the hot oil and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
  • While still warm, roll the Xuixo in sugar to coat.
  • Serve and enjoy!
