Xuixo
Ingredients
- 1 pound all-purpose flour
- 1 cup warm water
- 1/4 cup sugar
- 1/4 cup vegetable oil
- Pinch salt
- 1 egg
- 1/2 cup crema Catalan (similar to crème brûlée) or custard filling
- Vegetable oil for frying
- sugar additional for coating
Instructions
- In a large bowl, mix together the flour, sugar, salt, vegetable oil, and warm water until a dough forms. Knead the dough until smooth, then cover and let it rest for 30 minutes.
- Roll out the dough on a floured surface to about 1/4 inch thickness. Cut the dough into squares, about 4 inches by 4 inches.
- Place a spoonful of crema catalana or custard filling in the center of each square. Fold the dough over the filling to create a triangle shape and press the edges to seal.
- Heat vegetable oil in a deep fryer or large pot to 350°F (180°C). Carefully place the Xuixo in the hot oil and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
- While still warm, roll the Xuixo in sugar to coat.
- Serve and enjoy!
