Engagement Chicken
Ingredients
- 1 whole chicken (approximately 4 pounds)
- 2 lemons
- 3-4 sprigs fresh rosemary
- 4-5 cloves garlic minced
- Salt to taste
- Black pepper to taste
- Olive oil
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken inside and out, then pat it dry with paper towels.
- Sprinkle salt and pepper all over the chicken, including the cavity.
- Cut one of the lemons in half and squeeze the juice over the chicken, ensuring the entire surface is coated. Keep the squeezed lemon halves for later.
- Take the minced garlic and rub it all over the chicken, inside and out, ensuring it’s evenly distributed.
- Take the squeezed lemon halves and place them inside the chicken’s cavity, along with the fresh rosemary sprigs.
- Drizzle a generous amount of olive oil over the top of the chicken, making sure it’s well-coated.
- Place the chicken in a roasting pan, breast-side up.
- Slice the remaining lemon into thin rounds and arrange them on top of the chicken.
- Roast the chicken in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
- Once cooked, remove the chicken from the oven and let it rest for about 10-15 minutes before carving.
