Ingredients
  

  • 2 pounds chicken breasts boneless skinless cut into cubes
  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons ketchup
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Bamboo skewers (soaked in water for 30 minutes)

Method
 

  1. In a bowl, combine soy sauce, pineapple juice, brown sugar, ketchup, vegetable oil, minced garlic, grated ginger, salt, and pepper. Mix until the brown sugar is dissolved.
  2. Place the chicken cubes in a ziplock bag or a shallow dish and pour the marinade over them. Make sure the chicken is evenly coated. Marinate in the refrigerator for at least 2 hours, or overnight for maximum flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade, discarding any excess liquid.
  5. Thread the chicken pieces onto the soaked bamboo skewers, leaving a small space between each piece.
  6. Place the chicken kabobs on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  7. Remove from the grill and let them rest for a few minutes before serving.
  8. Serve the Huli-Huli BBQ Chicken Kabobs with your favorite side dishes, such as steamed rice, grilled vegetables, or a fresh salad.
