In a bowl, combine soy sauce, pineapple juice, brown sugar, ketchup, vegetable oil, minced garlic, grated ginger, salt, and pepper. Mix until the brown sugar is dissolved.
Place the chicken cubes in a ziplock bag or a shallow dish and pour the marinade over them. Make sure the chicken is evenly coated. Marinate in the refrigerator for at least 2 hours, or overnight for maximum flavor.
Preheat the grill to medium-high heat.
Remove the chicken from the marinade, discarding any excess liquid.
Thread the chicken pieces onto the soaked bamboo skewers, leaving a small space between each piece.
Place the chicken kabobs on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
Remove from the grill and let them rest for a few minutes before serving.
