Samgyeopsal is a delicious Korean dish that consists of thick slices of pork belly grilled to perfection. PThe name “samgyeopsal” translates to “three-layered pork” in Korean, referring to the layers of meat, fat, and skin that make it so flavorful. It’s typically served with various side dishes like lettuce, kimchi, and ssamjang (a spicy dipping sauce).

Ingredients
  

  • 2 pounds pork belly
  • 1 tablespoon soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons honey or sugar
  • 4 cloves garlic minced
  • Salt and pepper to taste
  • Lettuce leaves for wrapping
  • Kimchi and ssamjang for serving (optional)

Method
 

  1. Slice the pork belly into thin, about 1/4 inch thick, strips.
  2. In a bowl, combine the soy sauce, sesame oil, honey or sugar, minced garlic, salt, and pepper. Mix well to create a marinade.
  3. Place the pork belly slices into a large ziplock bag or a bowl. Pour the marinade over the pork belly and make sure all slices are coated evenly. Let it marinate for at least 30 minutes, or you can refrigerate overnight for more flavor.
  4. Preheat your grill or a non-stick pan over medium heat.
  5. Once the grill or pan is hot, place the marinated pork belly slices onto the grill or pan. Cook for about 2-3 minutes on each side, or until they are nicely browned and cooked through.
  6. Remove the cooked pork belly from the grill or pan and let it rest for a couple of minutes.
  7. Serve the samgyeopsal with lettuce leaves for wrapping. You can add kimchi and ssamjang as condiments to enhance the flavors.
  8. To enjoy, take a lettuce leaf, place a piece of grilled pork belly on it, add some kimchi and ssamjang if desired, and wrap it like a taco.
