- 2 pounds phyllo pastry dough
- 1 pound feta cheese crumbled
- 1 pound spinach chopped (optional)

- If using spinach, cook it in a pan over medium heat until wilted. Squeeze out any excess moisture and set aside. If using ground beef or lamb, cook it in a separate pan until browned. Drain any excess fat and set aside.
- Preheat your oven to 350°F (175°C).
- Lay out one sheet of phyllo pastry dough on a flat surface and brush it lightly with melted butter and vegetable oil.
- Place another sheet of phyllo dough on top of the first one and brush it with the butter and oil mixture as well. Repeat this process until you have about 6 to 8 layers.
- Spread the crumbled feta cheese evenly over the top layer of the phyllo dough. If using spinach or ground meat, add them as well.
- Fold the sides of the phyllo dough towards the center, covering the filling. Then roll the dough tightly from one end to the other, creating a long cylindrical shape.
- Brush the top of the rolled dough with more butter and oil mixture.
- Repeat steps 3 to 7 with the remaining phyllo dough and filling until you have used them all.
- Place the rolled dough on a baking sheet lined with parchment paper and bake in the preheated oven for about 30-35 minutes, or until the pastry turns golden brown and crispy.
- Once baked, remove from the oven and let it cool for a few minutes before slicing and serving.
