- 4 pounds pig’s trotters
- 1 cup soy sauce
- 1 cup rice wine
- 1 cup brown sugar
- 1 onion quartered
- 5 cloves garlic minced

- 4 cups water

Instructions
- Start by cleaning the pig’s trotters thoroughly. Remove any excess hair and wash them under running water. If needed, you can also soak them in cold water for about 30 minutes to remove any impurities.
- In a large pot, combine the soy sauce, rice wine, brown sugar, onion, garlic, ginger, sesame oil, black pepper, and water. Stir well to dissolve the sugar.
- Add the pig’s trotters to the pot and make sure they are fully submerged in the liquid. If needed, add additional water to cover them completely.
- Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let the trotters simmer for about 2.5 to 3 hours. Stir occasionally to prevent sticking.
