Ugali and Sukuma Wiki are traditional Kenyan dishes that are both delicious and nutritious! Ugali is a staple food made from maize flour or cornmeal, while Sukuma Wiki is a side dish made from collard greens or kale.

Ingredients
  

Ugali:
  • 2 cups maize flour or cornmeal
  • 4 cups water
  • Salt (to taste)
Sukuma Wiki:
  • 1 bunch collard greens or kale, washed and chopped
  • 1 onion finely chopped
  • 2 tomatoes diced
  • 2 cloves garlic minced
  • 1 tablespoon cooking oil
  • Salt and pepper (to taste)

Method
 

Ugali:
  1. In a large saucepan, bring the water to a boil.
  2. Gradually add the maize flour or cornmeal to the boiling water while stirring continuously.
  3. Keep stirring until the mixture thickens and forms a firm dough-like consistency.
  4. Reduce the heat to low and cover the saucepan. Allow it to cook for about 5-10 minutes, stirring occasionally to prevent sticking.
  5. Once the Ugali is cooked, remove it from the heat and let it rest for a few minutes.
  6. Serve the Ugali in a round shape or scoop portions onto plates.
Sukuma Wiki:
  1. Heat the cooking oil in a large skillet or pan over medium heat.
  2. Add the chopped onion and minced garlic to the pan and sauté until the onion becomes translucent and slightly golden.
  3. Add the diced tomatoes to the pan and cook for a few minutes until they soften.
  4. Now, add the chopped collard greens or kale to the pan. Stir everything together to combine.
  5. Reduce the heat to low, cover the pan, and let the Sukuma Wiki cook for about 10-15 minutes, or until the greens are tender.
  6. Season with salt and pepper according to your taste preferences.
  7. Remove from heat and serve the Sukuma Wiki alongside the Ugali.
