Method
Ugali:
- In a large saucepan, bring the water to a boil.
- Gradually add the maize flour or cornmeal to the boiling water while stirring continuously.
- Keep stirring until the mixture thickens and forms a firm dough-like consistency.
- Reduce the heat to low and cover the saucepan. Allow it to cook for about 5-10 minutes, stirring occasionally to prevent sticking.
- Once the Ugali is cooked, remove it from the heat and let it rest for a few minutes.
- Serve the Ugali in a round shape or scoop portions onto plates.
Sukuma Wiki:
- Heat the cooking oil in a large skillet or pan over medium heat.
- Add the chopped onion and minced garlic to the pan and sauté until the onion becomes translucent and slightly golden.
- Add the diced tomatoes to the pan and cook for a few minutes until they soften.
- Now, add the chopped collard greens or kale to the pan. Stir everything together to combine.
- Reduce the heat to low, cover the pan, and let the Sukuma Wiki cook for about 10-15 minutes, or until the greens are tender.
- Season with salt and pepper according to your taste preferences.
- Remove from heat and serve the Sukuma Wiki alongside the Ugali.
