Koeksisters are a delicious South African delicacy. Koeksisters are deep-fried pastries that are typically made from a plaited dough infused with sweet syrup. They have a crispy texture on the outside and a moist, syrupy center. Some people describe them as being similar to twisted doughnuts, but with a unique syrupy twist.

Ingredients
  

  • 4 cups cake flour
  • 2 teaspoons instant yeast
  • 1/2 cup melted butter
  • 1 cup water
  • Pinch salt
  • Vegetable oil for frying
For the syrup:
  • 2 cups sugar
  • 2 cups water
  • 1 cinnamon stick
  • 1 lemon zest

Method
 

  1. In a large mixing bowl, combine the cake flour, instant yeast, melted butter, water, and salt. Knead the mixture until a smooth dough forms. Cover the dough and let it rest for about 30 minutes.
  2. While the dough is resting, prepare the syrup. In a saucepan, combine the sugar, water, cinnamon stick, and lemon zest. Bring the mixture to a boil, then reduce the heat and let it simmer for about 5 minutes. Remove from heat and set aside to cool.
  3. After the dough has rested, divide it into smaller portions and roll each portion into long, thin strips. Cut the strips into smaller sections, around 4 inches in length.
  4. Take two strips and press their ends together, then twist them to form a braid-like shape. Repeat this process with the remaining dough.
  5. In a deep frying pan or pot, heat vegetable oil to around 356°F (180°C). Carefully fry the braided dough strips in batches until golden brown and crispy. Remove from the oil and drain on paper towels.
  6. While the koeksisters are still hot, dip them into the cooled syrup, ensuring they are fully coated. Allow them to soak in the syrup for a few minutes, then remove and place on a wire rack to cool and let the excess syrup drip off.
  7. Once cooled, the Koeksisters are ready to be enjoyed! They can be stored in an airtight container for a few days.
