- In a large mixing bowl, combine the cake flour, instant yeast, melted butter, water, and salt. Knead the mixture until a smooth dough forms. Cover the dough and let it rest for about 30 minutes.
- While the dough is resting, prepare the syrup. In a saucepan, combine the sugar, water, cinnamon stick, and lemon zest. Bring the mixture to a boil, then reduce the heat and let it simmer for about 5 minutes. Remove from heat and set aside to cool.
- After the dough has rested, divide it into smaller portions and roll each portion into long, thin strips. Cut the strips into smaller sections, around 4 inches in length.
- Take two strips and press their ends together, then twist them to form a braid-like shape. Repeat this process with the remaining dough.
- In a deep frying pan or pot, heat vegetable oil to around 356°F (180°C). Carefully fry the braided dough strips in batches until golden brown and crispy. Remove from the oil and drain on paper towels.
- While the koeksisters are still hot, dip them into the cooled syrup, ensuring they are fully coated. Allow them to soak in the syrup for a few minutes, then remove and place on a wire rack to cool and let the excess syrup drip off.
- Once cooled, the Koeksisters are ready to be enjoyed! They can be stored in an airtight container for a few days.
