- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the chopped onion, minced garlic, and red chili to the pan. Sauté until the onion becomes translucent and fragrant.
- Add the crab meat to the pan and stir-fry for a couple of minutes until it is heated through.
- In a small bowl, mix together the tomato ketchup, soy sauce, oyster sauce, and sweet chili sauce to make the sauce.
- Push the crab meat and vegetables to one side of the pan, creating space in the center. Pour the sauce into the empty space and stir-fry it for about a minute until it becomes aromatic.
- Mix the crab meat and vegetables with the sauce, ensuring they are evenly coated.
- Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry the rice with the sauce and other ingredients, ensuring it is well combined.
- Add the mixed vegetables and continue stir-frying for a few more minutes until the rice is heated through and the vegetables are tender.
- Season the fried rice with salt and pepper to taste. Adjust the seasoning and spice level according to your preference.
- Finally, add the chopped green onions and give everything a final stir.
- Serve the Chilli Crab Fried Rice hot, garnished with fresh cilantro leaves if desired.
