Chilli Crab Fried Rice is a delicious and popular dish that combines the flavors of spicy chilli crab and fragrant fried rice. Ingredients
  

  • 2 cups cooked rice (preferably day-old rice)
  • 200 grams crab meat (you can use fresh or canned)
  • 2-3 tablespoons vegetable oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 red chili finely chopped (adjust according to your spice preference)
  • 1 tablespoon tomato ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sweet chili sauce
  • 1/2 cup mixed vegetables (such as peas, carrots, and corn)
  • 2 green onions chopped
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish (optional)

Method
 

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the chopped onion, minced garlic, and red chili to the pan. Sauté until the onion becomes translucent and fragrant.
  3. Add the crab meat to the pan and stir-fry for a couple of minutes until it is heated through.
  4. In a small bowl, mix together the tomato ketchup, soy sauce, oyster sauce, and sweet chili sauce to make the sauce.
  5. Push the crab meat and vegetables to one side of the pan, creating space in the center. Pour the sauce into the empty space and stir-fry it for about a minute until it becomes aromatic.
  6. Mix the crab meat and vegetables with the sauce, ensuring they are evenly coated.
  7. Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry the rice with the sauce and other ingredients, ensuring it is well combined.
  8. Add the mixed vegetables and continue stir-frying for a few more minutes until the rice is heated through and the vegetables are tender.
  9. Season the fried rice with salt and pepper to taste. Adjust the seasoning and spice level according to your preference.
  10. Finally, add the chopped green onions and give everything a final stir.
  11. Serve the Chilli Crab Fried Rice hot, garnished with fresh cilantro leaves if desired.
