- In a large pot, add the chicken, beef, and pork. Fill the pot with enough water to cover the meat and bring it to a boil. Skim off any foam that rises to the surface.
- Reduce the heat to medium-low and add the chopped onion, minced garlic, and tomatoes to the pot. Let it simmer for about 30 minutes.
- Add the corn, yuca, plantains, potatoes, carrot, and bell pepper to the pot. Season with salt and pepper to taste. Continue simmering for another 30-40 minutes, or until the vegetables are tender.
- Once the soup is cooked, remove the pieces of meat from the pot and shred them into smaller pieces using a fork. Return the shredded meat to the pot.
- Finally, stir in the chopped cilantro and let it simmer for a few more minutes to allow the flavors to blend together.
- Serve hot and enjoy!
