In a large pot, add the chicken, beef, and pork. Fill the pot with enough water to cover the meat and bring it to a boil. Skim off any foam that rises to the surface.
Reduce the heat to medium-low and add the chopped onion, minced garlic, and tomatoes to the pot. Let it simmer for about 30 minutes.
Add the corn, yuca, plantains, potatoes, carrot, and bell pepper to the pot. Season with salt and pepper to taste. Continue simmering for another 30-40 minutes, or until the vegetables are tender.
Once the soup is cooked, remove the pieces of meat from the pot and shred them into smaller pieces using a fork. Return the shredded meat to the pot.
Finally, stir in the chopped cilantro and let it simmer for a few more minutes to allow the flavors to blend together.
