Loubia

Loubia is a delicious North African dish that originates from Algeria. It's a hearty and flavorful stew made with white beans, commonly known as Navy beans, cooked with a variety of ingredients like tomatoes, garlic, onions, and spices. Loubia is often enjoyed with crusty bread or rice.

Ingredients
  

  • 2 cups dried white beans (Navy beans), soaked overnight and drained
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes (14 oz)
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 3 cups vegetable broth or chicken broth
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and minced garlic to the pot and sauté until the onions are translucent.
  3. Stir in the tomato paste, cumin powder, paprika, turmeric, cayenne pepper, salt, and pepper. Cook for a minute to allow the flavors to meld.
  4. Add the soaked and drained white beans to the pot and stir well to coat them with the onion and spice mixture.
  5. Pour in the diced tomatoes and broth, then give it a good stir. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 to 1.5 hours until the beans are tender. Stir occasionally and add more broth if needed.
  7. Once the beans are cooked, taste and adjust the seasoning if necessary.
  8. Serve the Loubia hot, garnished with fresh parsley. It pairs well with crusty bread or steamed rice.
