Method
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and minced garlic to the pot and sauté until the onions are translucent.
- Stir in the tomato paste, cumin powder, paprika, turmeric, cayenne pepper, salt, and pepper. Cook for a minute to allow the flavors to meld.
- Add the soaked and drained white beans to the pot and stir well to coat them with the onion and spice mixture.
- Pour in the diced tomatoes and broth, then give it a good stir. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 to 1.5 hours until the beans are tender. Stir occasionally and add more broth if needed.
- Once the beans are cooked, taste and adjust the seasoning if necessary.
- Serve the Loubia hot, garnished with fresh parsley. It pairs well with crusty bread or steamed rice.
