Chicken Parmigiana, also known as "Chicken Parma" or "Chicken Parmi" in local slang, is a popular pub-style dish in Australia. It has its own unique twist compared to the traditional Italian-American version.
In Australia, a typical Chicken Parmigiana consists of a breaded and fried chicken schnitzel topped with tomato sauce, melted cheese (such as mozzarella or tasty cheese), and sometimes even a slice of ham. It's commonly served with a side of crispy chips (fries) and a fresh salad.

Ingredients
  

  • 4 chicken breasts skinless, boneless
  • 1 cup bread crumbs (you can use panko or regular breadcrumbs)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 eggs beaten
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • Olive oil for frying

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow bowl, mix together the breadcrumbs, grated Parmesan cheese, dried basil, dried oregano, garlic powder, salt, and pepper.
  3. Dip each chicken breast into the beaten eggs, ensuring it’s fully coated.
  4. Press the chicken into the breadcrumb mixture, coating it evenly on both sides.
  5. Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until they are golden brown and crispy.
  6. Transfer the cooked chicken breasts to a baking dish.
  7. Spoon tomato sauce over each chicken breast, covering them evenly.
  8. Sprinkle shredded mozzarella cheese over the top of the sauce.
  9. Bake the chicken in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  10. Once done, remove from the oven and let it cool for a few minutes before serving.
  11. Serve the Chicken Parmigiana with your choice of side dishes such as pasta, salad, or garlic bread.
