Potato Latkes
Ingredients
- 4 medium potatoes
- 1 small onion
- 2 eggs
- 3 tablespoons all-purpose flour
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- Vegetable oil for frying
Instructions
- Peel the potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a colander and squeeze out any excess moisture.
- Finely grate the onion and add it to the grated potatoes.
- In a large mixing bowl, beat the eggs and then add the grated potatoes and onions. Mix well.
- Add the flour, salt, and black pepper to the bowl, and stir until all the ingredients are well combined.
- Heat a generous amount of vegetable oil in a large frying pan over medium heat.
- Take a spoonful of the potato mixture and carefully drop it into the hot oil, flattening it slightly with the back of the spoon. Repeat to make a few more latkes, leaving enough space between them in the pan.
- Fry the latkes for about 3-4 minutes on each side until they turn golden brown and crispy. Use a spatula to flip them over.
- Once the latkes are cooked, transfer them to a paper towel-lined plate to drain any excess oil.
- Repeat the process with the remaining potato mixture until all the latkes are cooked.
- Serve the potato latkes hot, serve with and sour cream, applesauce, or any other toppings of your choice. Enjoy!
