Seitan nuggets are a popular plant-based alternative to traditional chicken nuggets. Seitan is a protein-rich meat substitute made from wheat gluten that has a chewy texture, which makes it perfect for creating nuggets. Seitan nuggets can be seasoned with a variety of spices and coated with breadcrumbs before being baked or fried until crispy.

Ingredients
  

  • 1 cup vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1/2 tablespoon paprika
  • 1/2 tablespoon salt
  • 1/2 cup vegetable broth
  • 1 tablespoon soy sauce
  • 2 tablespoon olive oil
  • 1 cup breadcrumbs

Method
 

  1. Preheat your oven to 375°F.
  2. In a mixing bowl, whisk together the vital wheat gluten, nutritional yeast, onion powder, garlic powder, paprika, and salt.
  3. In a separate bowl, mix together the vegetable broth, soy sauce, and olive oil.
  4. Add the wet ingredients to the dry ingredients and stir until a dough forms.
  5. Knead the dough for a few minutes, then form it into small nugget shapes.
  6. Place the breadcrumbs in a shallow dish. Roll each nugget in the breadcrumbs until coated.
  7. Place the nuggets on a baking sheet and bake for 20-25 minutes, until golden brown.
  8. Serve with your favorite dipping sauce and enjoy!
