Cheese Baked Lobster

Method
- Preheat your oven to 400°F.
- Cut a slit down the middle of each lobster tail, being careful not to cut all the way through. Gently spread the tails apart to expose the meat.
- Melt the butter in a saucepan over medium heat. Add the flour and whisk together until smooth. Cook for 1-2 minutes until the mixture is light golden brown.
- Gradually whisk in the milk, salt, black pepper, and garlic powder. Bring the mixture to a simmer and cook for 3-4 minutes, stirring constantly, until the sauce has thickened.
- Remove the saucepan from the heat and stir in the shredded cheddar cheese until melted and smooth.
- Spoon the cheese sauce over the top of each lobster tail, spreading it out evenly.
- Sprinkle a tablespoon melted butter over the top of the cheese sauce.
- Place the lobster tails on a baking sheet and bake for 12-15 minutes, or until the cheese is melted and bubbly.
- Remove the lobster tails from the oven and let them rest for a few minutes before serving. Enjoy your delicious cheese baked lobster!
