Almond & Parmesan Crusted Fish is a delicious dish where fish fillets are coated in a mixture of ground almonds, Parmesan cheese, breadcrumbs, and seasonings, then baked or pan-fried until crispy and golden.

Ingredients
  

  • 4 fish fillets such as tilapia or cod
  • 1/2 cup ground almonds
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 eggs beaten
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 425°F.
  2. In a shallow dish, mix together the ground almonds, Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.
  3. Dip each fish fillet in the beaten eggs, then press it into the almond mixture to coat both sides.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the fish fillets and cook for 2-3 minutes on each side until golden brown.
  5. Transfer the fish to a baking sheet lined with parchment paper and bake for 10-12 minutes until fully cooked and the crust is crispy.
  6. Serve with sweet potato mash and green beans with a squeeze of lemon juice. Enjoy!
