Almond & Parmesan Crusted Fish

- Preheat your oven to 425°F.
- In a shallow dish, mix together the ground almonds, Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.
- Dip each fish fillet in the beaten eggs, then press it into the almond mixture to coat both sides.
- Heat the olive oil in a large skillet over medium-high heat. Add the fish fillets and cook for 2-3 minutes on each side until golden brown.
- Transfer the fish to a baking sheet lined with parchment paper and bake for 10-12 minutes until fully cooked and the crust is crispy.
- Serve with sweet potato mash and green beans with a squeeze of lemon juice. Enjoy!
