Sepia a la Plancha is a popular Spanish dish that consists of grilled cuttlefish or squid that has been cooked on a hot griddle, or "plancha" in Spanish. The sepia is typically seasoned with olive oil, garlic, parsley, and lemon juice, and is often served with a side of grilled vegetables or a simple salad.

Ingredients
  

  • 2 medium cuttlefish or squid
  • 3 cloves garlic minced
  • 2 tablespoons parsley fresh, chopped
  • 2 tablespoons olive oil
  • 1/2 Juice half a lemon juice
  • Salt and black pepper to taste

Method
 

  1. Preheat a griddle over medium-high heat.
  2. Clean the cuttlefish or squid by removing the tentacles, ink sac, and spine. Wash well and pat dry with paper towels.
  3. Cut the cuttlefish or squid into rings, about 1/2 inch thick.
  4. In a bowl, mix the garlic, parsley, olive oil, lemon juice, salt, and black pepper.
  5. Brush the griddle with a little bit of olive oil.
  6. Place the cuttlefish or squid rings on the hot griddle and cook for about 2-3 minutes on each side, until cooked through and lightly browned.
  7. Drizzle the garlic and parsley mixture over the cuttlefish or squid and serve immediately.
