Bacalla amb patates is a traditional Catalan dish made with salt cod and potatoes. The salt cod is soaked in water to remove the excess salt and then cooked with sliced potatoes in a flavorful sauce made with garlic, onion, tomato, white wine, and olive oil.

Ingredients
  

  • 1 lb salt cod
  • 1 lb potatoes
  • 2 onions chopped
  • 2 garlic cloves minced
  • 2 ripe tomatoes chopped
  • 1/2 cup olive oil
  • 1/2 cup white wine
  • Salt and pepper to taste
  • Parsley for garnush

Method
 

  1. Soak the salt cod in water for at least 24 hours, changing the water several times to remove excess salt. Drain and rinse the cod.
  2. Peel the potatoes and slice them into thin rounds.
  3. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until softened, about 5 minutes.
  4. Add the tomatoes and cook for 5 more minutes.
  5. Add the white wine and bring to a simmer.
  6. Add the potatoes and cod to the skillet, making sure they are covered by the sauce.
  7. Cover the skillet and simmer for 30 minutes, or until the potatoes are tender.
  8. Season with salt and pepper to taste.
  9. Garnish with parsley and serve hot.
