Roast duck is a popular dish that involves cooking a whole duck in an oven at a high temperature until the skin is crispy and the meat is tender and juicy. Ingredients
  

  • 1 whole duck about 4 pounds
  • Salt and pepper
  • 2 teaspoons dried thyme
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 cup chicken stock

Method
 

  1. Preheat oven to 375°F.
  2. Rinse the duck under cold water and pat it dry with paper towels.
  3. Season the duck with salt, pepper, and dried thyme. Rub the seasonings onto the duck, making sure it’s well coated.
  4. Place the duck in a roasting pan, breast side up.
  5. In a small bowl, mix together the onion, garlic, and olive oil. Spread the mixture over the duck.
  6. Pour the chicken stock into the bottom of the roasting pan.
  7. Roast the duck for 1 1/2 to 2 hours, or until the skin is golden brown and crispy, and the internal temperature of the thickest part of the duck reaches 165°F.
  8. Remove the duck from the oven and let it rest for 10 minutes before carving.
