- 2 lbs mutton cut into bite size
- 2 onions sliced
- 4 cloves garlic minced
- 2 tsp ginger minced
- 1 tsp turmeric powder
- 1 tsp cinnamon powder
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt to taste
- 1/2 cup dried apricots
- 1/2 cup raisins
- 1/2 cup almonds toasted
- 2 cups chicken stock
- 2 tbsp olive oil
- 2 tbsp honey
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté for 5 minutes until onions are soft.
- Add mutton and cook until browned on all sides.
- Add ginger, turmeric, cinnamon, coriander, cumin, paprika, cayenne pepper, and salt. Cook for 2-3 minutes until fragrant.
- Add chicken stock and bring to a boil. Reduce heat to low, cover, and simmer for 1 hour.
- Add dried apricots and raisins to the pot. Simmer for another 30 minutes.
- Add honey and almonds, and cook for another 10 minutes.
- Serve hot with couscous or rice.
