Smothered Fried Chicken

Method
- In a large mixing bowl, combine flour, salt, black pepper, paprika, garlic powder, and cayenne pepper (if using).
- Dredge the chicken in the flour mixture, making sure each piece is evenly coated.
- Heat oil in a large skillet over medium-high heat. Add the chicken and cook for 10-12 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onions and garlic and sauté until softened, about 3-4 minutes.
- Add the butter to the skillet and stir until melted. Add the flour and stir until it forms a smooth paste. Cook for 2-3 minutes, stirring constantly.
- Gradually add chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until the gravy thickens.
- Season the gravy with salt and pepper to taste.
- Return the chicken to the skillet and spoon the gravy over it. Cover the skillet and let it simmer for 10-15 minutes, or until the chicken is tender and the gravy has mix well with the chicken.
- Serve the Smothered Fried Chicken hot, and enjoy!
