Smothered Fried Chicken is a delicious American southern-style dish that involves frying chicken to a crispy golden brown, and then simmering it in a flavorful gravy made from sautéed onions, garlic, and a roux (thickening) made with flour and butter. The chicken is cooked in the gravy until it's tender and juicy.

Ingredients
  

  • 6 chicken parts bone-in, skin-on
  • 1 cup all-purpose flour
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1/2 tablespoon cayenne pepper optional
  • 1/2 cup vegetable oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 2 tablespoon unsalted butter
  • 2 tablespoon all-purpose flour
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine flour, salt, black pepper, paprika, garlic powder, and cayenne pepper (if using).
  2. Dredge the chicken in the flour mixture, making sure each piece is evenly coated.
  3. Heat oil in a large skillet over medium-high heat. Add the chicken and cook for 10-12 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the onions and garlic and sauté until softened, about 3-4 minutes.
  5. Add the butter to the skillet and stir until melted. Add the flour and stir until it forms a smooth paste. Cook for 2-3 minutes, stirring constantly.
  6. Gradually add chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until the gravy thickens.
  7. Season the gravy with salt and pepper to taste.
  8. Return the chicken to the skillet and spoon the gravy over it. Cover the skillet and let it simmer for 10-15 minutes, or until the chicken is tender and the gravy has mix well with the chicken.
  9. Serve the Smothered Fried Chicken hot, and enjoy!
