Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups unsweetened applesauce
  • 1/2 cup chopped nuts (such as walnuts or pecans), optional
  • Powdered sugar for dusting, optional

Method
 

  1. Preheat your oven to 350°F (180°C) and grease a 9×9-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce, and mix until just combined. Fold in the chopped nuts, if using.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust with powdered sugar before serving, if desired.
  10. Enjoy with a cup of tea or coffee.
