Chicken Piccata
Ingredients
- 4 chicken breasts boneless, skinless
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 4 tablespoons butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers drained
- 2 tablespoons fresh parsley chopped
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Dredge the chicken breasts in flour, shaking off any excess.
- In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat.
- Add the chicken breasts to the skillet and cook for about 4-5 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a simmer and cook for 2-3 minutes.
- Stir in the remaining 2 tablespoons of butter until melted and the sauce has thickened slightly.
- Return the chicken breasts to the skillet and simmer for an additional 2-3 minutes, spooning the sauce over the chicken.
- Serve the chicken piccata hot, garnished with chopped parsley.
- Enjoy!
