Duck legs in curry
Ingredients
- 4 duck legs
- 2 tablespoons vegetable oil
- 1 onion chopped
- 3 cloves garlic minced
- 1 tablespoon curry powder
- 1 can coconut milk (14 oz)
- 1 cup chicken broth or vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Season the duck legs with salt and pepper.
- In a large skillet or Dutch oven, heat the vegetable oil over medium-high heat. Add the duck legs and brown them on all sides, about 5 minutes per side. Remove the duck legs and set aside.
- In the same skillet, add the chopped onion and garlic. Cook until softened, about 3-4 minutes.
- Stir in the curry powder and cook for another minute until fragrant.
- Pour in the coconut milk and chicken or vegetable broth. Bring to a simmer.
- Return the duck legs to the skillet. Cover and let simmer for about 1 to 1.5 hours, or until the duck is tender and cooked through.
- Taste and adjust seasoning with salt and pepper.
- Serve the duck legs in curry hot, garnished with fresh cilantro. Enjoy!
