Cajun Jambalaya

Method
- In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, bell pepper, and celery. Cook until vegetables are softened, about 5 minutes.
- Add minced garlic, Andouille sausage, chicken, and shrimp to the pot. Cook until meats are browned and shrimp turn pink, about 5-7 minutes.
- Stir in rice, diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper. Bring mixture to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
- Remove from heat and let sit for 5 minutes before fluffing with a fork.
- Serve Cajun Jambalaya hot, garnished with chopped green onions and a dash of hot sauce if desired.
