Ingredients
- 1 tablespoon olive oil
- 1 onion diced
- 1 green bell pepper diced
- 2 celery stalks diced
- 2 cloves garlic minced
- 1 lb. Andouille sausage sliced
- 1 lb. chicken breast diced
- 1 lb. large shrimp peeled and deveined
- 2 cups long-grain white rice
- 1 can diced tomatoes (14 oz)
- 3 cups chicken broth
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Green onions chopped (for garnish)
- Hot sauce (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, bell pepper, and celery. Cook until vegetables are softened, about 5 minutes.
