Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion diced
  • 1 green bell pepper diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 1 lb. Andouille sausage sliced
  • 1 lb. chicken breast diced
  • 1 lb. large shrimp peeled and deveined
  • 2 cups long-grain white rice
  • 1 can diced tomatoes (14 oz)
  • 3 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions chopped (for garnish)
  • Hot sauce (optional)

Method
 

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, bell pepper, and celery. Cook until vegetables are softened, about 5 minutes.
  2. Add minced garlic, Andouille sausage, chicken, and shrimp to the pot. Cook until meats are browned and shrimp turn pink, about 5-7 minutes.
  3. Stir in rice, diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper. Bring mixture to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  5. Remove from heat and let sit for 5 minutes before fluffing with a fork.
  6. Serve Cajun Jambalaya hot, garnished with chopped green onions and a dash of hot sauce if desired.
  7. Enjoy!
