Ingredients
  

  • 2 cups cashew milk unsweetened
  • ¼ cup peanut butter natural ,no sugar added
  • ¼ cup Gentle Sweet (TM)
  • 2 teaspoon vanilla extract
  • ½ cup water
  • 1 tablespoon gelatin

Method
 

  1. In a medium saucepan, combine unsweetened cashew milk, natural peanut butter, Gentle Sweet, and vanilla.
  2. Heat over medium heat until peanut butter has melted and mixture is smooth.
  3. In a small bowl, sprinkle 1 tablespoon gelatin over 1/2 cup cool water.
  4. Let sit for about 30 seconds, then stir well.
  5. Add gelatin mixture to pudding and stir well.
  6. Transfer into 4 ramekins and refrigerate for at least 2 hours before serving.
