Ofada stew is a delicious Nigerian stew made with palm oil, peppers, onions, and assorted meats or seafood. It is typically served with Ofada rice, a local and unpolished rice variety that adds a unique flavor and texture to the dish.

Ingredients
  

  • 2 cups palm oil
  • 1 large onion chopped
  • 3 bell peppers (red, green, yellow), chopped
  • 4 tomatoes chopped
  • 4 cloves garlic minced
  • 1 tablespoon ground crayfish
  • 1 teaspoon ground Cameroon pepper or cayenne pepper
  • Assorted meats or seafood (such as beef, goat, tripe, cow skin, or shrimp)
  • Salt to taste

Method
 

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the bell peppers, tomatoes, and garlic. Cook until the vegetables are soft and fragrant.
  4. Stir in the ground crayfish and Cameroon pepper. Cook for another 5 minutes.
  5. Add the assorted meats or seafood to the pot and mix well.
  6. Pour in enough water to cover the ingredients, bring to a boil, then reduce the heat and simmer for about 30-45 minutes, or until the meats are tender.
  7. Season with salt to taste and adjust the seasoning if needed.
  8. Serve the Ofada Stew hot with Ofada rice and enjoy!
