Cook Eggplants and Quinoa:
- Preheat oven to 400 degrees, line a baking sheet. Take the halved eggplants and gently mark it by crossing with a fork. Gently brush with 1 tablespoon olive oil and season with salt and pepper.
- Place the eggplants in the baking sheet and cut side down, roast for about 20 to 25 minutes, or until tender. Cook the quinoa according to package instructions.
Prepare Filling/Topping:
- Meanwhile prepare the filling. Heat remaining oil in a skillet. Add the onion and garlic, sauté for 2 to 3 minutes. To this add the cooked quinoa, finely chopped walnuts. Now add the cumin, salt and pepper. Stir well to combine the taste. Set aside.
Assemble Stuffed Eggplant:
- When the eggplants are done with cooking, place it into a serving plate. Fill in with the prepared eggplant mixture and top with chopped parsley and yoghurt. Enjoy with some slices of tomato and onion.
