Quinoa stuffed eggplant is a delicious and nutritious dish where eggplants are hollowed out and filled with a tasty mixture of quinoa, vegetables, herbs, and spices. It's a flavorful and filling vegetarian or vegan meal that's great for lunch or dinner.
Preheat oven to 400 degrees, line a baking sheet. Take the halved eggplants and gently mark it by crossing with a fork. Gently brush with 1 tablespoon olive oil and season with salt and pepper.
Place the eggplants in the baking sheet and cut side down, roast for about 20 to 25 minutes, or until tender. Cook the quinoa according to package instructions.
Prepare Filling/Topping:
Meanwhile prepare the filling. Heat remaining oil in a skillet. Add the onion and garlic, sauté for 2 to 3 minutes. To this add the cooked quinoa, finely chopped walnuts. Now add the cumin, salt and pepper. Stir well to combine the taste. Set aside.
Assemble Stuffed Eggplant:
When the eggplants are done with cooking, place it into a serving plate. Fill in with the prepared eggplant mixture and top with chopped parsley and yoghurt. Enjoy with some slices of tomato and onion.
