Spicy Sweet Corn Curry is a delicious and flavorful dish made with sweet corn kernels cooked in a spicy and aromatic curry sauce. Ingredients
  

  • 2 cups sweet corn kernels (fresh, frozen, or canned)
  • 1 onion finely chopped
  • 2 tomatoes chopped
  • 2 cloves garlic minced
  • 1- inch ginger grated
  • 1 green chili chopped (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro leaves for garnishing

Method
 

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add finely chopped onions and sauté until they turn translucent.
  3. Add minced garlic, grated ginger, and chopped green chili. Sauté for another minute.
  4. Add chopped tomatoes and cook until they soften and the oil starts to separate.
  5. Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well and cook for a minute.
  6. Add sweet corn kernels and mix until they are well coated with the spice mixture.
  7. Add a little water, cover the pan, and let it simmer for about 10-15 minutes until the corn is cooked and the flavors are well blended.
  8. Garnish with fresh cilantro leaves and serve hot with rice or bread.
  9. Enjoy!
