Spicy Sweet Corn Curry

Method
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions and sauté until they turn translucent.
- Add minced garlic, grated ginger, and chopped green chili. Sauté for another minute.
- Add chopped tomatoes and cook until they soften and the oil starts to separate.
- Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well and cook for a minute.
- Add sweet corn kernels and mix until they are well coated with the spice mixture.
- Add a little water, cover the pan, and let it simmer for about 10-15 minutes until the corn is cooked and the flavors are well blended.
- Garnish with fresh cilantro leaves and serve hot with rice or bread.
- Enjoy!
