Quinoa Salad
Ingredients
- 1 cup quinoa uncooked
- 12 cherry tomatoes quartered
- ½ zucchini sliced
- 1 bell pepper sliced
- 1 bok choy baby
- ¼ cup sweet corn cooked
- parsley fresh, chopped
- 2 tablespoon lemon juice
Instructions
- Cook the quinoa according to package directions. Meanwhile quarter the tomatoes, slice the zucchini and bell pepper, chop the parsley.
- When quinoa is done cooking, let cool completely. Place all salad ingredients (except lemon juice) in a large bowl. Pour the lemon juice over top and toss well to combine. Serve and enjoy.
