Ingredients
  

  • 2 pounds venison meat cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 carrots sliced
  • 4 potatoes peeled and diced
  • 4 cups beef broth or venison broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the venison cubes and brown them on all sides.
  2. Add the chopped onion and garlic to the pot and cook until softened.
  3. Stir in the carrots, potatoes, beef or venison broth, tomato paste, and thyme. Season with salt and pepper.
  4. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the meat is tender.
  5. Adjust seasoning to taste before serving.
  6. Enjoy!
