- In a large pot, heat the olive oil over medium heat. Add the venison cubes and brown them on all sides.
- Add the chopped onion and garlic to the pot and cook until softened.
- Stir in the carrots, potatoes, beef or venison broth, tomato paste, and thyme. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the meat is tender.
- Adjust seasoning to taste before serving.
