- 1 lb beef sirloin or flank steak, thinly sliced
- 1 cup dried apricots chopped
- 1 red bell pepper sliced
- 1 onion sliced
- 3 cloves garlic minced
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp honey
- 1 tsp ginger grated
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- Salt and pepper to taste

Instructions
- In a bowl, combine soy sauce, oyster sauce, honey, grated ginger, and cornstarch. Mix well and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add sliced beef to the skillet and stir-fry until browned. Remove beef from the skillet and set aside.
- In the same skillet, add more oil if needed and sauté garlic, onion, and bell pepper until softened.
- Add the chopped apricots and stir-fry for a few minutes.
- Return the cooked beef to the skillet and pour the sauce over the beef and vegetables. Stir well to combine.
- Cook for a few more minutes until the sauce thickens and everything is heated through.
- Season with salt and pepper to taste.
- Serve the beef apricot stir-fry over cooked rice or noodles.
