- In a large bowl, combine the drained tuna, bread crumbs, eggs, mayonnaise, Dijon mustard, parsley, garlic powder, salt, and pepper. Mix well until fully combined.
- Divide the mixture into 8 equal portions and shape each portion into a patty.
- Heat the olive oil in a skillet over medium heat.
- Place the tuna patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- Serve the tuna fish cakes hot with your favorite dipping sauce or on a bed of greens.
